Goat cheese ice cream
I've always been intrigued by this dish: this is a goat cheese ice cream — the cheese comes from the Big Island — with a strawberry-rhubarb "minute" jam and baby arugula. On top is a piece of Elizabeth's Volcano Island honey candy. It's refreshing, it's playful, it's easily one of my favorites.

Hey Cat: … wow, an interesting menu … but I have to admit, I’d have trouble with the squab too … only because growing up I used to raise and train pigeons … countless hours with them … it was my escape from the world back then …
… I know that they’re also bred for the table … but still …
… and damn!!! … 3 1/2 hours!!! … of eating??? … or for the drinking fest after the meal??? … haha!!! …
Squab just isn’t my thing… I can’t get into it. I’m sure it was prepared perfectly. I just can’t eat it. :/
