Cat Chat 15: Better than bar food

When the boutique-style Waikiki EDITION opened about five months ago, people buzzed about celebrity sightings, Morimoto Restaurant and the $10,000-a-night penthouse that’s completely over the top.

And the travel world was eager to see this new partnership between hotelier Ian Schrager and Marriott International as the uber-chic Waikiki hotel is the first in the boutique chain.

But did anyone tell you about the luxe Lobby Bar? More specifically, the food served there?

I hadn’t heard about it — well, except for the dramatic rotating bookcase that separates the lobby from the stylish bar area. So we sat down with the Lobby Bar’s executive chef Kaleo Adams — local boy from Waiehu, Maui — who shared with us a few of the more popular dishes here.

We’re talking about grilled pizza with pancetta and blue cheese, steamed buns filled with spicy Korean-style beef or juicy pork belly, a Kona coffee-chocolate ganache paired with vanilla bean ice cream and a pork shoulder that’s so good I couldn’t stop eating it — even after the camera stopped rolling.

What we loved about the place: the cool oversize sofas, the homey feel of the bar, the custom cocktails and the fact that Chef Adams goes to the farmer’s market at Kapi’olani Community College every Saturday to pick up fresh, local ingredients for his food.

Now that’s cool.

    Cat, what was in that sauce that you were dipping the french fries into? That one looked like a must try.

      @DianeSeo It was a white wine sauce that came with the pork shoulder and clams. SO GOOD! Didn’t think it would work — but it did!

    CAT: Guud interview…you really are at your best with fuud chats..I think its because you are a true fuudie. Nice video set up, lighting is perfect, audio spot on, all we need is taste-o-vision and it would be great!

    Good fun episode
    Heard lots of great things about Lobby Bar
    When I’m in that part of Waikiki, I’m usually across the street at Buffalo Wild Wings
    Open till 3am ?? I can make that.

    I think this episode was the best quality Cat Chat has had so far, at least when I watched the HD version via my Roku box. However I think there could have been a little better closeups of the food, maybe stick in a still shot or two? Just a suggestion. Looked good though! Some of the things seemed a little korean taco truck -ish, getting ideas from the food trucks maybe? Well if I’m ever in Waikiki on that rare occasion I may check out this place.

    I’m making a list of food places I need to visit when I’m in Hawai’i at the end of May, and this looks like a must try. Good video! I’m just sorta discovering these Cat Chat videos. Watched a few of the earlier episodes, and they were all good. Can’t wait for the next one!
